Blood Orange EVOO Shaved Brussel Sprout Salad

1 cup or about 8-10 shaved brussel sprouts
1 watermelon radish (thinly sliced)
1 lemon (juice)
1 tbs Dijon mustard
2 tbs DIVINO blood orange infused olive oil
2 tbs DIVINO classic olive oil
2 tbs truffle marcona almonds (roughly chopped) – you can find these at Trader Joes or substitute for regular almonds
¼ cup sliced oranges

In a small mixing bowl, whisk Dijon mustard, DIVINO blood orange olive oil, classic olive oil, and lemon juice

-In a medium sized mixing bowl, add brussel sprouts, watermelon radish, and almonds
-Begin mixing in the blood orange vinaigrette
-Mix in oranges

Kathy . . .thanks so much for sharing and the picture.  Sorry it took so long for me to post!!

Kathy was just grilling it . . . .tossed both the brussel sprouts and scallops in the DIVINO Sorrento Lemon EVOO and put it on the grill.  YUM!!

As an added note:  I did my brussel sprouts this way then added chopped reduced sugar craisins aong with a drizzle of DIVINO Classic Balsamic Vinegar . . .OMB was it awesome.

Ginger Pureed Carrots w/Blood Orange EVOO – Barbara, Glenridge, NJ

Thanks for sharing this with us Barbara.  She had purchased DIVINO Blood Orange EVOO and was explaining to me what she was doing with the product.

First wash and peel carrots then cut into chucks and boil together with grated fresh ginger.  When the carrots are softened drain them.  Take the cooked carrots and put into a food processor or blender.  Add DIVINO Blood Orange EVOO, butter, more fresh ginger to taste, salt and a squeeze of agave.  Puree all together and serve.

Sounds like a great recipe.  One I must try myself.  Thank you again!

Sweet & Yam Mashed Potatoes – Blood Orange Olive Oil

Get anyone to eat sweet potatoes.  This is delicious.

Depending  on how many your serving or how much you want as a quick side dish leftover —

Peel and dice sweet potatoes and yams (I like doing some of each)

Boil them as you would to make your regular mashed potatoes.  Strain and put into mixing bowl.  I add a little bit of milk, salt and butter.  Whip the potatoes before you add anymore liquid, add 1 tsp. of Blood Orange Olive Oil and whip more.  Adjust liquid accordingly to how you like it!!

My parents absolutely love their sweet potatoes this way.  Enjoy!
