First I got my Hellman’s mayo about a 1/2 c., about 1 TBSP of DIVINO Classic Balsamic Vinegar
and then added 1/2 c. of finely grated parmesan cheese. Mix it all up.

Next I prepared my chicken breast of course washing/cleaning them up. I cut them in half and then in half lengthwise. (About 1 1/4 lb. of chicken) Using my delicious olive oils I used both DIVINO Basil EVOO and DIVINO Garlic EVOO in the fry pan. Using a medium sized pan on medium heat – heat the pan first, then adding the oil and waiting till hot. By hot I mean just before sizzling and splattering out of the pan. I par cooked them so they had a beautiful golden color on both sides and then removed from heat.

Now coat both sides of the cutlets with the mayo/balsamic/cheese mixture and lay on a tin foil lined sheet and then sprinkle with Italian Seasoned bread crumbs. Next time I’m going to season my own but use panko instead and see how it turns out.

Cook in oven which you preheated to 425 degrees. They are done in about 20 minutes. ENJOY! They were very easy and very delicious.
